Don Emilio BBQ Baby Back Ribs

How to Prepare Baby Back Ribs

I think there are two basics to satisfy the most demanding palates. One is to remove the silver skin and the other is the tender of the ribs, and that’s means long time and slow cooking, that’s will make your ribs fall off the bone! My mouth is literally watering as I’m writing this recipe.

This recipe is for 4 to 6 persons. When Ribs being your main entree I usually plan on each person eating ½ rack of ribs, so a full rack of ribs would feed 2 or maybe 3 people.

Ingredients:

  • 2 full racks of baby back pork ribs
  • 10 oz of BBQ sauce prepared with Salsa Macha Morita Don Emilio!
  • Dry Rub
  • Yellow Mustard
  • Honey

For the Dry Rub: 

  • 1/4 cup brown sugar 
  • 2 teaspoons black pepper 
  • 2 teaspoons sea salt
  • 2 ½ teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground mustard
  • ½ teaspoon cinnamon
  • ½ teaspoon celery salt

Mix well all the ingredients in a bowl for the Dry Rub.

For the BBQ sauce:

Please try to do your own BBQ sauce. It is much easier than one can imagine. (please check translation. In Spanish: Es mucho más fácil de lo que uno cree)

This hot and spicy barbecue sauce is a simple combination of ingredients you can easily get. It's nicely sweetened with molasses, and the Salsa Macha Morita Don Emilio gives it a very pleasant heat. I recommend doing it a day before your cooking the ribs.

  • 1 tablespoon unsalted butter
  • ¼ cup canola or vegetable oil
  • 1 yellow onions chopped
  • 4 cloves garlic minced
  • 1 ½ teaspoons dried thyme
  • 1 cup tomato paste
  • ½ cup Dijon mustard
  • 1 cup beef broth
  • 1 cup apple cider vinegar
  • 1 cup molasses
  • 1 cup hoisin sauce
  • 1 cup raw or brown sugar
  • 1 cup Worcestershire sauce
  • 1 cup low-sodium soy sauce
  • 1 cup of Salsa Macha Morita Don Emilio for hot and ½ for mild results
  • 2 tablespoons ground cumin

In a saucepan, melt the butter and add the oil. Add the onion, garlic and thyme and cook over moderate heat until the onion is softened, about 5 minutes. In a bowl mix the rest of the ingredients and pour in the saucepan and bring to a boil. Simmer over low heat, stirring occasionally, until thickened, about 30 minutes.




Now you have the Dry Rub and the Hot Spicy BBQ Sauce

Sprinkle the Dry Rub all over the ribs, pressing and patting it. If you have time you can cover the ribs with plastic wrap and refrigerate them for 2 hours minimum or best overnight. If not let them rest 10-20 min with the Dry Rub until it moistens.

How to Cook Baby Back Ribs

    1. Preheat oven to 225º.

    2. Remove the membrane or silver skin from the bottom side of the ribs and add a small amount of yellow mustard on both sides and rub them.



    3. Sprinkle the Dry Rub all over the ribs, pressing and patting it. If you have time you can cover the ribs with plastic wrap and refrigerate them for 2 hours minimum or best overnight. If not let them rest 10-20 min with the Dry Rub until it moistens.



    4. Preheated the oven at 225°F, add a 2 cups of water to the bottom of each baking dish, put the racks with the meat face up and bake for 2 hours.

    5. Passed the first 2 hours spray them with 50/50 of apple juice and apple cider vinegar and cook for 1 more hour.

    6. Then place an aluminum foil big enough for wrap each rack of ribs. First put brown sugar, 5 cubes of butter and 2 tablespoons of Salsa Macha Morita Don Emilio oil and a little of honey ! You can sprinkle more of our Dry Rub mix. Place rack them with meat face down.

    7. Wrap them and place it in the oven with bone side up for two more hours at 225°F. You want the ribs to have an internal temperature of 145°F. Take them out of the oven and let them rest for 1 hour. Great place to put it to rest is in inside an empty close cooler.

    8. Preheat the oven to 325°F Open foil and brush with our BBQ sauce gently and cook the ribs about 30 min or until the BBQ sauce is browned and caramelized, it depends on each oven and how you preferred the bbq sauce. I really like it dark brown and very caramelized, and then I put them more bbq sauce before eat them. Remember to let them rest at least 10 min before serving and add more bbq sauce if desired.
